Festive Bite-Sized Treats: Ways to Utilize Christmas Leftovers into New Year’s Eve Canapes
What types of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas remaining food that will still impress guests?
Party snacks doesn't have to be elaborate, so New Year's presents a great chance to use up what's left. The key rule is to stick to items to just one bite—no one wants to manoeuvre a fork. People just want a comforting taste of hearty fare with a decadent twist.
If you have a bit of cured fish left, layer it on mini pancakes and crown it with affordable roe. Mini fishcakes are also just the ticket: If you have remaining fish or flaked salmon, mix it through mashed potato, blend with dill, lemon, and fried leeks, then coat in Japanese breadcrumbs and fry until golden.
You could also have a ball with croquetas. Prepare the white sauce up to days ahead, then use remaining pork, poultry, or foraged fungi for the interior. Whizz stale bread into crumbs to cover them, then fry. Savoury pastry mixtures are another natural home for those crumbs, or use them as a jacket for bite-sized chicken. Seasoning-wise, all you need a bit of lemon zest and thyme, and they'll sing so much more. Incidentally, croissants make excellent coatings, too.
One favourite thing at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Get some holiday meats in an airtight container and store in the freezer. While you're at it, reserve some berry relish and sweet glaze in the fridge. When needed, thaw the meat, then place it in a preheated oven with the reserved glaze for a brief period. Cool and cut into thin pieces, then arrange on top of some sourdough and assemble mini sandwiches with lots of cranberry sauce. Cut into small squares for a winner.
Remaining poultry, meanwhile, could be transformed into a spicy, crisp salad. You often have a bit of dark meat left over, and it's ideal for something full of flavour. Pull the meat, then crisp it slowly in a pan, and mix with leftover cranberry sauce loosened with citrus juice, a spoonful of soy and a little spicy oil. Finish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be scrubbed up and fit for a party with a big batch of bubble and squeak. Mix all your leftover veg with fresh herbs, then season and incorporate flour. Stamp out portions to about the size of blinis, then keep in the freezer. Reheat in a hot oven for a few minutes and top with your choice of topping—perhaps roast beef and sharp horseradish. A word to the wise, though: save a stash for a late breakfast the next day.
